You need so few ingredients to make an amazing meal. The idea of writing my cookbook came to me when I was living in the Bahamas for a year. With a food boat coming in only once a week (that’s if the the weather allowed it), I had access to very little ingredients. Nonetheless, I’ve never ate better than during that time, growing herbs and getting my own fish/ seafood (lobsters, crabs, etc).
