2019 Best New Chef Caroline Glover is quick to credit the woman behind the name at @annette_scratchtotable. Her great-aunt Netsie, she says, didn’t teach her how to cook, but she did teach her something else—how to have an opinion. “Netsie showed me I could speak my mind,” she says, “but it was working in kitchens that really got me there.” And Glover’s opinions—that there’s no such thing as too much cheese, that seasoning only makes sense when it’s aggressive, that people ought to eat more beef tongue—are ones we can all get behind.
