When oil is hot, add diced potatoes and cook for about 2-3 minutes before stirring. Sprinkle with some pink s+p, then stir and let cook another 2-3 minutes. Stir again, and cook until browned and crispy. Remove with a slotted spoon to a paper towel lined plate.⁣ ⁣ Trim steak of fat, gristle and silver membrane, then cut into 1/2" cubes. Season steak with about 1 tsp pink s+p. In same skillet, add 1 tbsp butter/ghee and let melt and get foamy. Add half of steak into skillet and let sit undisturbed for about 30-45 seconds before turning over. Let cook another 30 seconds and remove to plate. Repeat with remaining steak. ⁣ ⁣ In same skillet, drain excess fat and wipe out. Add 1/2 tsp butter and let heat for a bit, then add in whisked eggs.
