Ingredients:
2 lbs zucchini, sliced
1 lb rainbow carrots, sliced
8 eggs
1/4 cup coconut milk (or heavy cream)
1 tsp FlavorGod Pink S+P
1 tbsp FlavorGod Garlic Lovers
1 tsp butter/ghee
Directions:
To slice the veggies very thinly you can use a sharp knife, use a mandoline, or use a veggie peeler. I used a mandoline on the thinnest slice setting. The slicing is the most labor intensive part, but it turns out beautifully!
Preheat oven to 350F degrees. Grease the bottom and sides of a 10" round baking dish with butter or ghee. Starting from the outside working your way in, arrange the veggie slices by overlapping each piece about 1/2-1" until you have filled in your dish.
In a mixing bowl, whisk together eggs, milk, pink s+p, and garlic lovers. Slowly pour eggs evenly over veggies. Sprinkle more garlic lovers on top. Slide onto a baking sheet and put in oven. Bake for 60 minutes, then check to see if eggs are set. If not, continue cooking for 5 more minutes or until eggs are completely set. May take up to 75 minutes all together.
Let cool, then cut into wedges and serve!
