Set aside on paper towels.⁣ .⁣ While bacon is cooking, heat ghee in 12" cast iron skillet over med-high, then add diced sweet potatoes. Season with pink s+p and chipotle seasonings. Cook potatoes for about 10-15 minutes, stirring a few times. Potatoes should be fork tender.⁣ .⁣ Add bacon and stir into potatoes. With a spoon, make little holes to crack the eggs into.
