I’ve been waiting for an evening off so I could go to @congresswine for their famous Pig’s Head Sanga ever since I got to Melbourne. (It is, you could say, a sister dish to the veal sweetbreads schnitty sanga I loved at @fleetrestaurant.) Friends, it did not disappoint. But nothing there did. I loved it all - the eggplant/aubergine with redcurrants (it’s summer here, not to rub it in), soy and quinoa (pic 2), the grilled cos with green goddess dressing and almonds (pic 3) and, not pictured I’m afraid: the tomatoes with whipped garlic and curry leaves; the hasselback sweet potato with furikake and sunflower tahini; the ox tongue skewer with chermoula; spaghetti with squash, chilli and pecorino; wagyu rump cap; and the tangy Dutch spice cake. Oh, and glorious bread with the most wonderful malt butter. And alongside a peppy Fleet Amis Rosé from South Gippsland. A lovely evening yesterday.
