Did you know cashew trees and poison ivy are both from the family Anacardiaceae? The toxin found in these plants is urushiol, which is also found in poison oak and mangoes! Urushiol is an oily, sticky toxin that causes skin blistering in herbivores—and in some humans who brush against it. Wondering why it’s ok to snack on processed cashews? The toxins are only found in the oil of a cashew shell, not the actual nut. That’s why cashews are typically sold already shelled.
