Essentially, you fry chilli flakes and garlic in a pan, add a can of tomatoes and crack an egg or two into it, sprinkle with Parmesan and let the eggs cook in the spicy sauce. Of course it’s very similar, but this is the Italian variant - you could almost describe it thus - and is, in Italian, Uova in Purgatorio (sometimes called, more prosaically, uova al pomodoro). These simple basic dishes exist in many countries and cultures.
