Still wiped out from all the cooking last week so tonight I'm keeping it easy with this Ricotta & Basil Pesto Chicken Linguine with my latest obsession: @barillaus Creamy Ricotta & Basil Pesto! Sauté some chicken, whip up a quick creamy pesto sauce and toss it with pasta - Voila! #ad
16 ounces Barilla linguine pasta
3 chicken breasts (cut into bite-sized pieces)
1 tsp kosher salt
½ teaspoon freshly cracked black pepper
½ teaspoon red pepper flakes
½ teaspoon garlic powder
4 tbsp olive oil
1/4 cup Barilla Creamy Ricotta & Basil pesto
1/2 cup heavy cream
1/4 cup grated parmesan cheese
Cook the pasta according to the directions on the package.
Season the chicken with the salt, pepper, red pepper flakes and garlic powder. Heat a large skillet over medium high heat and add the olive oil. Add the chicken to the skillet and cook until golden and cooked throughout, around 7-8 minutes.
Once the chicken is cooked, reduce the heat to medium low and add in the pesto, cream, and parmesan cheese, cook for 3 minutes until combined and slightly thickened. Drain the pasta, reserving 1 cup of the pasta water if needed and add to the skillet with the chicken and stir to combine. If you need to thin it out, add a few tablespoons of the pasta water and stir to combine. Season to taste with a salt and pepper as needed. #barilla
