Pumpkin Pie Crust- 1/2 cup cassava flour 1/4 cup coconut flour 3/4 cup arrowroot starch 1/2 tbsp maple coconut or date sugar 1/4 tsp salt 1 tsp cinnamon 1 tsp fresh ground vanilla 3/4 cup pam shortening or solid coconut oil or vegan butter 1/3 cup very cold water -Shortening butter or oil should be refrigerated before use -Combine all except water and oil -Then add oil and water, combine until dough looks like wet sand. -Form into a ball then wrap and refrigerate for at least 1 hour Pumpkin mixture 1 15oz can organic pumpkin or fresh pumpkin 1/4 cup full fat coconut milk 1 tbsp arrowroot starch 1/4 tsp xanthan gum (can do without but must let set in frig after baking) 1/2 tsp of ground ginger, cinnamon, vanilla, cloves, nutmeg 1 tsp salt 1/4 cup maple syrup can use honey too Preheat oven 350 -Take dough out of frig and let sit for 15 minutes. -roll out dough between two pieces of parchment paper or can press into pie pan -Prebake crust for 10 min- -Mix all pumpkin ingredients together -Pour into prebaked crust and bake for around 30 minutes- -Let sit for 25 minutes it will form up. I like to stick in frig for about 10. Enjoy!!

Pumpkin Pie
Crust-
1/2 cup cassava flour
1/4 cup coconut flour
3/4 cup arrowroot starch

1 tsp cinnamon
1 tsp fresh ground vanilla
3/4 cup pam shortening or solid coconut oil or vegan butter
