Friday: Tlacoyos, a Mexican street food of pre-Hispanic origins. A torpedo shaped pattie of corn masa filled with beans and fried, topped with fresh salsa roja, sprinkled with plenty of queso fresco, avocado, coriander leaf and lime ?????? So nice to have taken the week off from cooking too
