INGREDIENTS:

15-20 mini sweet peppers
Pico de Gallo, small container
Optional garnishes: olives, green onions

Taco Meat
1 pound grass-fed ground beef
1 small onion, diced
2-3 Tbsp FlavorGod TACO TUESDAY Seasoning
1/2 cup tomato sauce

Avocado Sauce
1/2 avocado
1/2 cup fresh cilantro
1/2 jalapeño, seeded
1/4 cup paleo mayo
1/4 cup water
2 Tbsp lime juice
1 clove garlic
1/2 tsp salt

INSTRUCTIONS-

Slice mini sweet peppers lengthwise in half and remove seeds. Grill (10-15 minutes, turning once) or bake (10-12 minutes at 400ºF). Set aside and make the taco meat.

Add 2 tablespoons of a fat of your choice in a skillet over medium heat. Add the ground beef and diced onion – cook until meat is browned. Add just 2-3 tablespoons of FlavorGod TACO TUESDAY, then add the 1/2 cup of tomato sauce. Simmer for 5 minutes stirring occasionally, then remove from heat.

Add all the Avocado Sauce ingredients listed above to a blender or food processor. Blend until smooth.

Spoon taco meat into cooked sweet pepper halves. Next add a little Pico de Gallo to each. Garnish with olives, green onions, chopped cilantro. Finish with the Avocado Sauce.
