Continuing our celebrations of all things Matcha, we're kicking off Friday drinks with a delightful cocktail - Midori Kumo - created by our mixologist @alanbeauseigneur. Fresh, fruity and earthy - it's the perfect start to the weekend....

Midori Kumo recipe:
- 50ml EIC gin
- 20ml Matcha syrup
- 10ml yuzu juice
- 50ml pineapple juice
- 50ml cucumber
For the foam:
- 60g granulated sugar
- 3.5 soy lecithin powder
- 15g EIC Matcha
- 2g salt
- 300g water
Combine all the ingredients, add some ice and shake. Double strain and top with foam (made by combining everything with an electric blender). Serve in a Japanese tumbler and sip away.
