It feels like summer is here! Peaches are at the farmer’s market so amp them up a bit. White Peach Bellinis⠀
Serves 10⠀

Cheesecloth⠀
5 very ripe white peaches, peeled, halved, and pitted
Two 750-ml bottles chilled champagne or prosecco⠀
⠀
Line a large strainer with a layer of cheesecloth and set the strainer over a large bowl. Place the peaches in a food processor and puree until smooth. Pour the peach puree into the cheesecloth-lined strainer. Using a silicone spatula, press on the peach puree to extract as much juice as possible into the bowl (some of the pulp will be pressed through the cheesecloth). ⠀
Spoon 2 tablespoons peach juice into 10 champagne flutes. Fill the flutes with champagne and serve. #bellinis #fridaylibations #kitchenrevelry
