Fritters
1 grated courgette
1-2 sliced spring onion
3 tbsp sweetcorn
2 beaten eggs
Salt & pepper
Mix all ingredients cook in a frying pan like a omelette/pancake.

Guacamole
2 large tomatoes sliced
2 avocados
1/2 fresh chilli ?
Half lime juice
Chopped Coriander
Salt & pepper
Mix all ingredient & serve on top of the fritters & too with 1-2 poached eggs ???
