So, time flies and this month marked one year since I started my bakery. I was never complaining about boredom in life, but this year... THIS year... probably the most intense and rock and roll time of my life. Not much sleep, a lot of work, a lot of bread, a lot of experiments, a lot of mistakes... but I allowed myself for all this. Right now I rent a 12m2 studio, have two decks, mixer and two fridges, can work during day... But remember when I was working nights and baked my breads in 3 cast irons and 3 pizza stones in a convection oven... Well, that’s a past, and reality is that my life is quite how I want it to be. Freedom instead of brick and mortar bakery. Maybe one day... Really looking forward what future will bring #cincin
