Almost 5 years ago, on a quiet stretch of Spring Street in Soho, nearly 2 years after we first opened the bakery, we were getting ready to launch a new item right around Mother’s Day. I remember working on 10 different recipes over more than 2 months until we got it right, and then we worked on different flavors and presentations. We decided on Vanilla Rose ganache (the top middle one) for our very first Cronut®, which debuted the next day, on May 10, 2013. We had 4 employees back then, but a lot has happened over the past 5 years, and I’m grateful to now have a team and family here in NYC, in Tokyo, London, and now LA too, and to have met so many of you all over the years. As the Cronut® is about to turn 5, I’ll never forget those early days (and also how the iPhone camera has gotten so much better since! ?).
