?? Crispy Cheddar Sweet Potato PROTEIN Wedges #RECIPE ??:

INGREDIENTS:
- 2 tbsp oat flour
- 1 egg, large (lightly beaten)
- 2 (bags) Quest Cheddar Chips
- 1 medium-large sweet potato
- 1/4 tsp garlic powder
- pinch salt

DIRECTIONS:
1. Preheat oven to 425 F and prepare a baking sheet with parchment paper.
2. Cut the sweet potato into wedges (about 16) and place them on a microwave safe plate. Cook in the microwave for 3 minutes. Let cool.
3. Place the oat flour in a bowl and set aside. Place the lightly beaten egg in a bowl and set aside. Place the Quest chips and garlic powder into a food processor or blender and blend until small crumbles form. Transfer mixture to a bowl.
4. Dip both sides of a potato wedge in the oat flour--coating it well. Place the sweet potato in the egg bowl until completely covered and then immediately dip it in the chip mixture until completely coated. Place the potato wedge on the baking sheet. Repeat until you have finished all the wedges.
5. Bake wedges for 6 minutes. Flip and continue cooking for another 6 minutes.
