Upstairs in our restaurant @189bydominiqueansel, our dessert menu pays homage to cooking basics and the lessons that every young chef first learns when they’re first brought into the kitchen. Each dessert is a story that illustrates a kitchen technique, so first up: “The Well.” For chefs, it’s amazing what we can make with just flour, butter, sugar, and eggs. With the right foundations, with creativity and technique, you can create anything. For this dish, we’re inspired by the start of almost every type of dough in cooking, with a well of flour, then adding some eggs. Here, it’s a milk granita with wildflower honey syrup, passion fruit gelée, fennel meringue, and fennel spritz.
