For about two months I’m practicing baguettes, trying to get a satysfying straight method bread. I wasn’t very happy with my previous bakes - the crumb was too tight, texture rather gummy, crust too dark, so I adjusted a lot of things and for the first time I feel I’m onto something. They turned pretty ugly, I think I overproofed them, but never so far got this open, delicate crumb and pretty complex flavor. What makes me the happiest, they are made entirely with Polish all purpouse flour. I’ve never wrote this, but for me baking with Polish flour fells like I was Learning how to walk again. Feeling this constant discomfort, knowing that so many things can be done better...
