Tonight was a truly special night for me on a very personal note. 12 years in Padstow waiting to say the words CA MARCHE, WATCH THIS TABLE, Gordon Ramsay. To all the young chefs out there starting out or right now feeling pretty low or absolutely dead on your feet. KEEP GOING! and don't stop. I never in my wildest dreams when I set foot in Royal Hospital Road in 1999 did I ever think I would have my own Restaurant with my wife Emma let alone cook for Gordon in it. I never thought I was owed it, or it should just come my way just because I work hard. Be kind & humble, Stay teachable, Value feedback, Show gratitude, Work for the best and give your mentors proper loyalty. Most importantly listen to learn and grow not to just reply. Because I am telling you now to have tonight's moment is worth all the sacrifice chefs. GoodNight????????1999 to 2017
