Crispy thin healthy pancakes: (Batch makes enough for 2 people or 1 very hungry person)
1 very ripe banana
2 eggs + 2 eggwhites
1 tbsp glutenfree rolled oats
1/2 tbsp shredded coconut
Cinnamon (the more the yummier)
Vanilla (the more the yummier)
1-2 teaspoons almond butter
Pinch of salt
Whip It real good -> fry thin pancakes using a hot pan with a little bit of coconut oil -> serve with berries, more cinnamon, cacaonibs, and coconut yogurt or more almond butter... or whatever you like?? Pst... Secret tip to make it even better, when u put the coconut oil in the pan also put thin slices of banana and shredded coconut before pouring over the pancake mixture.
