Happy #NationalZucchiniDay! Try these zucchini fritters to celebrate! Recipe below:

Ingredients

zucchini 24 ounces [, shredded]
sour cream 1/2 cup [(dipping sauce)]
black pepper 1 pinch
baking soda 1/2 teaspoon
flour 2 cups
salt 1 Tablespoon
parsley 2 Tablespoons [, chopped (dipping sauce)]
lime juice 1 teaspoon [(dipping sauce)]
eggs 4 whole [, beaten]
cooking oil 2 cups [, for frying]
green onion 2 Tablespoons [, chopped]
Hoisin Sauce 4 Tablespoons [(dipping sauce)] Directions
In a medium mixing bowl, combine eggs, flour, salt, black pepper, and baking soda. Mix well.
Stir in green onion and zucchini. Mix well.
Heat oil in pan on high. Drop 2 Tbsp of zucchini mixture into oil. Repeat. Cook zucchini until golden brown.
Dipping Sauce: In a small mixing bowl, combine sour cream, Lee Kum KeeTM Hoisin Sauce, lime juice, parsley, and black pepper. Mix well.
