I thought I would share the current favorite omelette of a certain funny gentleman:
Tomato with Crispy and Gooey Mozzarella.
Ingredients:
Half of a shallot, sliced
As many cherry tomatoes as you like, halved.
3 eggs, whisked (or blended in a blender for 20 seconds)
As much Shredded mozzarella as you like
3 basil ? leaves, torn
Salt

Heat pan on medium, add olive oil. Add shallots, cook until golden brown, add tomatoes and cook until tomatoes are soft (2-3 mins). Whisk eggs, season with a little salt. In the pan, make sure tomatoes are evenly distributed in pan, and pour in eggs. Cover. Cook for 2-3min. Add mozzarella, cover again until melted. Gently rip basil, sprinkle on top. Fold the omelette in half, let the cheese ooze out and let it burn a bit around the edges in the pan....take off heat and serve.
Ps- i am in LOVE with this green non-stick pan I bought on @goop. I believe it is called GreenPan?
