Salt pans, Tamarin, Mauritius- salt production dates from the French, almost 2 centuries ago. Cobblestone basins are filled with sea water and left to evaporate in this driest side of the island with highest percentage of sunshine, producing fleur de sel, "flower of the sea." The hard work is done by women in blue skirts and white blouses.
