Quibble all you like, but clam pizza is the best pizza in the world. At least, that’s what @samsifton argues in this week’s @nytmag. Pizza dressed with clams, he says, is “a balm against the pain of the world.” It was probably Frank Pepe who invented the dish, scattering freshly shucked littlenecks onto a round of dough, then pecorino cheese, garlic, oregano, black pepper and a torrent of olive oil. That was in the 1940s, according to his family, which still operates @frankpepepizza in New Haven. @samsifton’s recipe for clam chowder pizza honors “no one particular preparation of the pie," he writes. "It honors all of them” — from the @frannysbk model (no cheese) to the clam pizza at @pizzamoto (add potatoes).
