Pasture raised egg yolks from eggs bought at farmers market. Funny observation. Those eggs are much smaller from organic eggs, but yolks are actually much heavier. Last time I was using supermarket organic free range eggs and all yolks were around 15 grams while here they were between 18g sometimes even around 20g. The color is much more vivid and whites feels much less watery and firmer. Tose pasture eggs might be twice as expensive, but I used less of them, so final bill isn't that painfull.
