When week starts with baked almond mascarpone omlette, anything can't go wrong. Here goes the recipe for two of those guys (that completely by accident happen to be #glutenfree): Beat two egg whites stiff and set aside. In separate bowl cream two egg yolks with two tsp of sugar until fluffy, add generous two tbsp of mascarpone and two tbsp of almond flour and mix until well combined. Gently fold in whites. Butter souffle dish and sprinkle with almond flour, spoon prepared mixture, sprinkle with almond flakes. Bake in 370 for about 25 minutes. Serve warm with fresh fruit or favourite jam.
