Ahh, the joys of a #BanoffeePaella... it's not the most decorative, but this is a dish about simplicity and delicate textures. By using the paella pan to flambee the bananas (secret ingredient - a bit of passion fruit in the caramel), we get nice caramelization and more flavor. And by building it upside down with the crust on top, it prevents it from being soggy and allows it to stay extra crumbly. Other than that, we're keeping it simple and classic (@dominiqueansellondon opens Sep 30th at 8am on Elizabeth street!)
