It’s true. It’s the last day of August and summer is fading away — going, going, but not quite gone. Still, the season has changed. Days are shortening. Even if hot weather hasn’t packed up and left town, we all know darker days are standing in the wings. As the air cools, you might feel like cooking your summer #veggies instead of eating everything raw. With that in mind, here is a hearty but not heavy stew for the (not quite) end of summer.
