Recipe: Nove Italiano's Pomegranate Chicken Bake Prep time: 10 minutes Cook time: 20 minutes Makes 2 servings Ingredients: - Pounded chicken-2 chicken breasts - Spinach-2 Cups - Mushrooms-1 Cup - Red onions-1/2 cup - Arugula-1/2 cup - Aged Balsamic-1oz - Pomegranate fruit-1oz - Pomegranate sauce-1oz - Salt and Pepper to taste - Chopped Garlic-1/2 oz. - Panko bread crumbs-2 cups - Parsley-1oz - Whole eggs-4 whole eggs - Flour-2 Cups - Mozzarella cheese-2 thinly slices - White wine-2oz Cooking Method: 1. Pound chicken breast, season with salt and pepper. Stuff chicken with sautéed spinach, mushrooms and a slice of mozzarella cheese 2. Fold chicken over stuffing and seal with toothpicks. 3. Coat the chicken breast in flour, egg wash and then season panko breadcrumbs. 4. In a deep fryer or well-oiled sauté pan, sear the chicken breasts on all sides until golden brown. 5. Finish in oven. Bake at 350 degrees for 10 minutes 6. While the chicken bakes, sauté chopped garlic, spinach and mushrooms. Deglaze with white wine and season with salt and pepper. 7. In a mixing bowl, add arugula, sliced red onions and season with EVOO salt and pepper. 8. Place sautéed mushrooms, spinach mixture in the center of a plate.Remove toothpicks and cut chicken bake on a bias into one inch thick slices. 9. Place Chicken around the sautéed mushroom and spinach. 10. Add the dressed arugula salad on top. 11. Sauce the Chicken with pomegranate sauce and aged balsamic. 12.
