making up a favorite simple dressing for tonight's salad - a few cloves of smashed garlic a splash of white wine vinegar a good squeeze of fresh lemon juice & a crack of black pepper swirled together with a generous spoonful of the grainiest of mustards -then whisk it all with a few glugs of sweet fruity olive oil - simple but heavenly especially when accompanied by the first tender heads of red lettuce from our garden and a few thin slices of spring onion and delicate white anchovies
