“We’re in trouble in this country,” said the health-minded chef David Bouley (@bouleynyc). “We have to turn this around. I really believe in this.” The 63-year-old chef is known for his hungry mind and insatiable appetite for change, motion and new information. That’s part of the reason he’s retooling his restaurants, and himself. The way @bouleynyc sees it, food is a cure. He plans to study the relationship between health and food — taking #nutrition classes at @nyuniversity and hobnobbing with holistic doctors in France. He’ll travel to Japan, Peru, Cuba and Switzerland to consult experts. And his namesake restaurant in TriBeCa — recently awarded ⭐⭐⭐ by @nytfood critic @pete_wells — will vanish. After “sabbatical,” Bouley will reopen in a smaller space with a mission of healthful eating. @colewilson took this portrait of the long-influential chef in the lounge at Bouley in TriBeCa.
