Today our clay wood fired oven suprised us with a little bit too bien cuit bake :)). We heated it in a different way, steamed generously and after 30 minutes bread was overbaked - especially on the top, bottom was acceptable. The good thing - the bread got amazing volume despite beeing entirely made with very soft T45 flour (10% proteins) and addition of cooked spelt berries. Knowing all this, I really can't wait for tommorow baking. I have some nice oat porridge dough going on, maybe we will nail it this time ✌ #rusticfantastic #adventuresinbaking
