Foreign workers pick tomatoes in a center pivot irrigation farm near Wadi Dawasir, on the edge of the Empty Quarter in Saudi Arabia. The Empty Quarter is the world’s largest sand sea, and one of the hottest places on earth. The water comes from an ancient aquifer of fossil water, and after twenty years or so the wells will go dry and the fields will be abandoned. With summer temperatures approaching 50°C (120°F) the irrigation system has to run year round, even when it’s too hot to grow plants, to prevent salt build-up in the soils due to extreme evaporation.
