INGREDIENTS:
1 Tbsp olive oil
1/3 cup diced onion
1/3 cup diced red bell pepper
1 cup chopped mushrooms
1 clove garlic, minced
1/4 cup sliced olives
Handful of fresh spinach
Flavor God PIZZA Seasoning
Salt and pepper to taste
7 eggs
1/3 cup full fat coconut milk
Pepperoni slices

INSTRUCTIONS:
Preheat oven to 350ºF.

In a skillet over medium heat, sauté onions and bell pepper 2-3 minutes. Add mushrooms and season to taste with Flavor God PIZZA Seasoning. Cook until mushrooms are tender. Next add garlic and stir for 1 minute. Finally stir in olives and spinach – cook just until spinach is slightly wilted. Remove skillet from heat.

In a separate bowl, whisk eggs and coconut milk together. Add a few shakes of Flavor God PIZZA seasoning to the mix, plus salt and pepper if desired.

Line a muffin tin with paper or non-stick silicone muffin cups. First put a spoonful of the pizza topping mixture from the skillet into each cup. Then fill each cup about 2/3 full with the egg/coconut mixture. Top each with a pepperoni slice.

Bake cups in 350ºF oven until egg is cooked through – about 20 minutes. Serve hot and enjoy!
