Start your dough. - Dough 1 3/4 c flour 1.5 tsp salt 1/2 tsp + a pinch of instant yeast 3/4 c + 2 T water - Using your stand mixer again with the paddle attachment, stir flour, salt and yeast. Add water and continue mixing until it looks like a "shaggy mess". At that point, replace the paddle attachment with the dough hook and mix for 3 minutes or until the dough forms into a ball. Continue to knead dough for 4 more minutes on low speed. The dough should bounce back when lightly prodded. Spray a large bowl with cooking spray and place dough in bowl. Cover with plastic wrap and let dough rise at room temperature for an hour or until it doubles in size. - Topping 1 egg + 1 T water, whisked together 1/2 c grated cheddar cheese To Assemble Preheat oven to 325°F and line a baking sheet with parchment paper. On a floured surface, punch down dough and then divide into 8 equal pieces. Gently stretch each piece of dough into a mini disc about 3-4" wide. Take cream cheese mixture out of freezer and place one chunk of cream cheese in the middle of each disc. Pinch dough together to fully enclose cream cheese, roll dough between hands. Brush egg wash on top and finish off with cheese. Bake for 25-30 minutes. Let them cool on a cooling rack for 10 minutes before eating. Refrigerate any leftovers. - FLAVORGOD.COM
