Taco Stuffed Veggie Boats

What you need:
2 Zucchinis (cut in halves)
2 Squash (cut in halves)
1/2 cup Salsa
1lb Extra Lean Ground Turkey (or chicken)
2tbsp Taco Tuesday @Flavorgod Seasonings seasoning
1/2 Bell Pepper (chopped/minced)
1/2 small Onion (chopped minced)
4oz can tomato sauce
**Reduced fat shredded cheese (optional)
and topped with Fresh Cilantro

What todo:
Preheat oven 400 degrees. Bring large pot of water to boil and place 1/4 cup of salsa on the bottom of a large baking dish. Using a spoon, hollow out the center of each zucchini and squash. Scoop out the middle of the zucchini and squash and place the remaining aside (you will need this for your turkey taco mix) Place the remaining zucchini and squash into a paper towel and ring out the excess water. Drop both the zucchini and squash into boiling water for about 1-2 minutes. Remove from water.
Brown ground turkey (or chicken) in large skillet, when almost cooked through add in chopped peppers, onions, reserved zucchini and squash, tomato sauce and @Flavorgod Seasonings seasoning. Simmer low for about 15-20 mins. Using a spoon, fill the hallow “veggie boats” (zucchini and squash) with the taco meat mixture. Top with shredded cheese, cover with foil and bake for about 30 mins on 400 degrees! Top with fresh cilantro and serve with a side of salsa!
