INGREDIENTS:
?4-small gold potatoes (Peeled and diced into 1/2" cubes)
?4-eggs
?1-cup sliced crimini mushrooms
?1/4 cup- chopped white onions
?1/4 cup-diced tomatoes
?1/4 cup- diced avocado
?2 tbsp-extra virgin olive oil
?2 tbsp-#flavorgod ranch seasoning
Optional: #Flavorgod pink salt & pepper /sprinkle as desired

DIRECTIONS:
?Cook diced potatoes in boiling water for about 4 minutes, until just a bit tender but not cooked
?Drain potatoes
?Heat olive oil on medium heat in a heavy skillet
?dry potatoes , than add potatoes and onions
?when frying potatoes make sure to scoop up from bottom of pan with a spatula occasionally for even cooking and browning. Move around in the pan frequently
?sauté for about 5-7 minutes
?add mushrooms and sauté for another 1-2 minutes
?add #flavorgod ranch seasoning
? in another pan, heat the olive oil and scramble the eggs
?mix all together and top with diced avocado and tomatoes
?enjoy!!
