Sweet Golden Maduros With Mint Mojo Recipe
This dish combines ripe plantains with a zesty mint mojo sauce, a Cuban-inspired condiment that adds a refreshing and tangy twist to your meal.

Servings: 4 servings
Ingredients:
- 2 ripe plantains
- Oil, for frying
- ½ cup fresh mint leaves
- 1 ½ tablespoons lemon juice
- 2 tablespoons orange juice
- 2 medium garlic cloves
- 1 cup parsley
- ¼ cup capers
- 1 small onion
- ½ cup olive oil
Directions:
1. Slice the plantains into ½-inch slices.
2. Set a pan to medium heat. Add enough oil to cover the plantains at least halfway up the sides. Place the plantain slices in the pan, forming a single layer (work in batches if necessary). Fry for 3-5 minutes, until the plantains are golden brown on one side.
3. While the plantains fry, add the remaining ingredients to a food processor or high-speed blender. Blender until a smooth texture is achieved.
4. Flip the plantains and fry on the other side, for 2-3 minutes. Remove the fried plantains and place them on a paper towel-lined plate to absorb excess oil. Repeat with remaining plantains.
5. Serve fried plantains with sauce.
