Hi guys as its nearly Chinese New Year I thought I'd intro you to the legend that is Gilbert Lau, one of my food heroes and one of Australia’s most renowned restaurateurs from "Flower Drum" a Cantonese restaurant and Melbourne institution. 15 years ago in the Naked Chef days I was flying to Australia to work never having believed I’d ever visit such a dream land. And it was crazy! I did massive book signings with thousands of people, TV shows, cooking demos It really felt like being in a boy band. But despite all the proper madness, I’d always try to grab dinner somewhere iconic and incredible, so I could switch off and be inspired, I guess good food kept me sane! And this is when I met Gilbert charming , hilarious with his wonderful energy this is a man who always had time to give every one of his customers love no matter how busy it got – Gilbert grew up in southern China – in what was then known as Canton – with five younger brothers and a grandfather who also owned a restaurant, cooking and serving was in Gilbert’s blood, in the 1970s he set up "Flower Drum" As one of the many Chinese who’d immigrated to Australia in the post-war years, he did a great job of guiding the Aussie public through the best food of his native country; amazing duck dishes , salt and pepper squid, incredible noodle dishes and comforting broths. I also ate his most insane ribs – Flower Drum doesn’t make them anymore, but Gilbert caved in and kindly gave Jamie Magazine the recipe – you have to try cooking them! Flower Drum was one of those places where you’d always leave with a big smile on your face. In a funny way, Gilbert reminded me of my dad. both are what any great restaurant needs: that overseeing eye to maintain the rhythm and keeping standards high. after almost four decades of running Flower Drum, Gilbert has now handed it over and is now helping his two sons to run the ever-popular "Lau’s Family Kitchen" which we've written a story on in this months Jamie Magazine check it out happy Chinese new year x x @australia
