the natural challenge. producing a good unwashed/sundried natural/dry processed coffee requires just as much love and attention as a washed coffee. because naturals are often reserved for the local market (where these rough looking cherry pods will end up), the process all too often manifests into moldy, unclean, fermented cups. when executed with care, however, the results are fruit-forward and magnificent.
