Mexican fiesta! Happy Cinco de Mayo people... Here is my version of an awesome Mex night with a healthy twist: Sautéed bell peppers and onion w a whole lotta kale (add chili/cayenne/paprika/cilantro early w the oil to get the taste out if the herbs are dried), home made guacamole (I never put tomato in ever! I like it thick and chunky) made with organic avocados, home made retried beans (insanely easy: sauté black beans w Bragg's liquid aminos+chopped garlic and a little olive oil, then mash! No need to add lard and crazy stuff like that), fresh tomato and lettuce, corn, cheese of choice and gluten free tortillas... And a good salsa. Also, I love the blue corn tortilla chips! Drink with Corona or a shot of Porfidio gold if it's a real fiesta you're throwing (we're good with coconut water today!?) Are you guys enjoying your Sunday? Love!
