Back with another easy recipe that my whole family loves❤️ Episode 6 is Stir Fried Vermecelli. I especially love this recipe because the protein & veggies are thinly sliced so they blend in with the noodles and Levi doesn’t pick anything out.
You can use any protein you like here- chicken, beef, shrimp, bbq pork, tofu (the cooking time will just differ). Make it vegetarian/seafood free by using vegetarian oyster sauce.

Ingredients (serves 3-4):
*200g dried vermicelli (usually its 50g per noodle bundle, so 4 bundles)
*1/2 lbs of extra firm tofu, sliced (you can do chicken, pork, beef, or shrimp here too)
*2 eggs
*1 carrot, julienned or shredded
*1 medium onion, sliced
*1 bell pepper sliced (I had really small ones so I did a few) red, yellow or orange ones work best here
*about 40g of cabbage, thinly sliced
*2 tbsp neutral oil
*1 tbsp chopped garlic

Sauce:
Ingredients D (seasoning)
*3 tbsp ketchup
*2 tbsp oyster sauce (you can use vegetarian oyster sauce here if you’re allergic to shellfish or are vegetarian)
*2 tbsp coconut aminos or soy sauce
*1/4 tsp sesame oil
*1/8 tsp ground white pepper

Method:
1. Bring a pot of water to boil. Blanch the vermicelli until soft (about 1-2 min). Immediately palce the noodles in a bowl of ice cold water to stop the cooking process before straining them and setting them to the side.
2. Chop the veggies, onion, garlic, and thinly slice the tofu (or your protein of choice). Scrample 2 eggs in bowl. Mix the sauce.
3. Heat up 2 tablespoons of vegetable oil in a wok or large frying pan. Saute garlic for about 30 seconds before adding the tofu (or other meat) and onions. Cook until the onions are soft and/or the meat is cooked.
4. Add the cabbage, carrot, and bell pepper then stir-fry for another 2 minutes. Push all the ingredients to the side.
5. Add 1 tablespoon of vegetable oil and scramble two beaten eggs until 80% cooked. Mix everything together.
6. Add the vermicelli and the sauce. Turn the heat to high and stir-fry until everything is mixed (1-2 min). Don’t fry for too long or it will make the noodles too soft.
7. Top with your choice of toppings (sesame seeds, scallions, hot sauce)
