Holiday cravings are upon us😬so I’ve done the work to create a healthy swap for a classic holiday favorite! This pumpkin bread tastes like the real thing but is so much healthier! -made with @questnutrition multi-purpose mix protein powder!

Ingredients:
•1 ½ cup (I did less) sugar substitute
•½ cup extra light tasting olive oil
•2 large eggs
•1 can (15 oz) pumpkin puree
•2 cups Quest Multi-Purpose Mix
•1 tbsp pumpkin pie spice
•½ tsp cinnamon
•1 tsp baking soda
•½ tsp baking powder
•½ tsp table salt

Instructions:
1. Preheat the oven to 325 degrees.
2. Grease & flour 2 -12 count muffin tins OR 2- 8×4″ loaf pans & set aside.
3. With an electric hand mixer, whisk together sugar substitute and olive oil in a large bowl until it looks like wet sand.
4. Whisk in the eggs until well-combined.
5. Add in the pumpkin puree & mix well.
6. Combine Quest Multi-purpose protein powder, pumpkin pie spice, baking soda, salt & baking powder in small bowl then add into wet ingredients until just combined – don’t over-mix.
7. Use an ice cream size scoop to portion into muffin tins, or divide the batter evenly between the 2 prepared loaf pans.
8. Bake 23-28 minutes for muffin tins or 40-60 minutes for loaf tins. For both methods use the toothpick test, remove when toothpick comes out clean.
Allow the loaves to cool on a wire rack for 10 minutes before removing from the pans.
Remove from the pans & allow the loaves to continue cooling until they reach room temperature. My favorite icing is a cinnamon cream cheese! Enjoy! 🥰🎃 #MyFavQuest #QuestPartner
