I received so many questions last week when I posted a photo of my speedy 15 minute salmon stir-fry so I thought I’d show you how easy it is to make. This meal is a complete life saver for me in those for those moments when I want for a nutritious meal but want to keep cooking time to a minimum 🤤✨

Ingredients:
1 tablespoons Miso paste
1 tablespoon Ginger paste
2 tablespoons Tamari soy sauce
2 salmon fillets
3 heads of Pak Choi or veg of choice
300g Fresh rice noodles
2 cloves of garlic, minced
1 red chilli, finely chopped
1 lime (for dressing)
1 tablespoon Toasted sesame oil or coconut oil

Method:

1. Preheat your oven to 180°C (360°F).
2. In a bowl, mix together the Miso paste and Ginger paste to create a marinade. Coat the salmon fillets with this mixture, ensuring they are evenly covered.

3. Place the marinated salmon fillets on a baking tray and bake in the preheated oven for approximately 8 minutes or until the salmon is cooked to your preferred level.

4. While the salmon is baking, chop the Pak Choi into bite-sised and, sauté with a dash of water and toasted sesame oil over medium heat for about 2 minutes.

5. Add the minced garlic and finely chopped chili (for a little kick) and continue to stir-fry for an additional 2 minutes.

6. Mix in the fresh rice noodles and add a dash of Tamari soy sauce. Stir-fry the noodles and vegetables together for an additional 2 minutes or until they are well combined and heated through.

7. Once the salmon is done, remove it from the oven. To serve, place the stir-fried noodles and vegetables on a plate and top them with the baked salmon fillets.

8. Before serving, squeeze fresh lime juice over the dish for a burst of citrusy flavour. You could also add a drizzle of soy sauce or siracha for added spice.
