Hi y’all! As you might have seen, I was so busy getting ready for my trip to Rwanda that I didn’t have a chance to post this new recipe I made from my recent retreat with @sadhguru ! I am SO excited to share this recipe and also more about getting ready for Rwanda later this week! The recipe is below so tag me if you make it!

VEGETABLE MAKHANWALA RECIPE:

INGREDIENTS:
1-2 tbsp olive oil
1 tsp ginger, chopped
1 large tomato, chopped
1/2 tbsp cumin powder
1 cup coconut milk
1 whole cinnamon stick
2 bay leaves
5 whole cloves
5 whole green cardamom pods
1 tbsp coriander powder
1 tsp turmeric powder
1/2 tbsp paprika powder
1 tbsp garam masala
4 cups fresh veggies (zucchini, peas, carrots, etc.), chopped
a few sprigs fresh cilantro, chopped
quinoa or rice, for serving

RECIPES:
1. Heat oil over medium-high heat and then add ginger, chopped tomato, cumin and coconut milk to form the base.
2. Add the whole and powdered spices and stir continuously.
3. Add vegetables and simmer for 8-10 minutes.
4. Before serving, remove bay leaves, cardamom pods and cinnamon stick. Serve over cooked quinoa or rice.
5. Garnish with chopped cilantro. Enjoy!!
