Ugh I can’t get enough of this salad. It’s so so good I had to share 🥗

Ingredients:
Grilled chicken
1/2 sweet potato
Asparagus
Arugula
Cilantro

Sometimes I add pine nuts, chickpeas, or pistachios for texture.

I also LOVE avocado but I’ve been making avo toast in the mornings and want to watch my fat intake.

Dressing:
1/3 cup olive oil
1 tbs lemon juice
1 tbs apple cider vinegar
2 tsp dijon mustard
1 garlic clove minced
Salt and pep
