Wagyu Brisket cooked with hickory wood🔥
Heres what I did⬇️
I started with a 17 lbs packer brisket from @wagyuofalabama and trimmed the fat as needed (3 lbs total). Save the trimmings to make tallow by rendering down in a pot on low for 1-2 hours, strain and set aside.
Apply @dalesseasoning marinade to all sides and then liberally season all sides and edges with @Flavorgod Seasonings Everything Seasoning.
I cooked this brisket fat side up over 4 cups of apple juice and 1 liter of @drpepper
I cooked this at 225🌡️ and after 2 hours I added Gunpowder seasoning to the top. After 12 hours the bark had formed and I poured the tallow all over the top, then wrapped it in butcher paper. After 25 hours the brisket was probe tender at 199🌡️INT. I then placed it in my @bbq_dripez Brisket Warmer then into my @arcticzone cooler to rest for 3 hours before slicing.
