It came out so good even after frozen & reheated in the oven. Just prep, freeze, and when ready just bake covered with foil at 400° F for 50 minutes then uncovered for 10-15mins. ____________  INGREDIENTS * 2 pounds ground beef * 1 yellow grated onion * 5-6 slices 1” cut turkey or ham * 1/2 cup chopped mushrooms (lightly cooked) * 5 slices provolone cheese (or mozzarella ) * 1 tsp oregano * a little less than 1/4 cup chopped parsley * 1 tsp @flavorgod garlic lover’s seasoning * 1 tbs Worcestershire sauce * 1 egg * 1/2 cup @cutdacarb breadcrumbs (pulse bread & season w/ salt pepper & garlic powder) or other low carb breadcrumbs * 1/4 tsp salt and pepper * 2 tbs @ghughessugarfree ketchup  TOPPING * 4 tbs sugar free ketchup * 1 tbs brown @swervesweetie * 2 tbs cider vinegar  METHOD * Preheat oven to 350° F * Mix beef with onion, parsley, egg, breadcrumbs, Worcestershire, ketchup, & all other seasonings listed. Let chill in fridge for 15-20mins * Mix together topping ingredients. * Flatten out beef mixture on cling wrap, making sure the cling wrap is big enough for when you roll the meat length wise. Lay out slices of turkey/ham, cheese & your mushrooms. * Begin rolling your meat into a loaf, seal ends shut. Remove cling wrap & brush with 1/2 of topping glaze. If freezing, brush with half of the glaze and then roll and freeze for later. Place meatloaf onto a lightly greased pan or line with parchment paper & bake 45mins. Remove & brush with rest of the glaze & spoon over any meat juice; bake for another 25-30mins. * Remove & let sit for 10mins. Enjoy with your favorite veggies & mashed cauliflower.
